Critter Crackers
A yummy snack that balances sweet and spice in a Histamine Friendly way!

When you’re navigating histamine intolerance and all the other layers of food sensitivity like oxalates and salicylates, — most store-bought snacks are pretty much off the table. I really wanted to create something that felt like a treat, but was still simple, safe, and stashable. These little crackers are just that: freezer-friendly, lightly sweet, and easy to keep on hand when you need something comforting and clean.
Sorghum Flour is naturally gluten-free and brings a naturally complex flavor — almost a soft “spice” — that gives these crackers a surprisingly rich taste for such a simple recipe. Don’t worry though, they’re toddler-tested and approved, so the flavor isn’t too bold for little ones. If you don’t like the flavor of sorghum, you can swap it out with your preferred flour or flour substitute, of course.
I decided to call these “Critter Crackers”— though the cookie cutters are optional of course! I actually used Christmas cookie stamps (because that’s what I had on hand), but cookie cutters like these or any that you have would be adorable for this recipe, year round!
This recipe calls for our delicious homemade vanilla-infused oil recipe that I shared a few weeks ago. If you don’t have any on hand, vanilla bean powder is a great alternative — and both give you that lovely vanilla flavor without any added alcohol, gums, or fermented ingredients.
Freezer Storage
Store them in your favorite freezer-safe container (with parchment between layers). I personally enjoy them straight from the freezer, but you could warm them gently to your preferred temperature in the microwave— whatever works best for you.
Honestly, this recipe is super simple — not a lot of notes needed. Just mix, shape, bake, and enjoy.

Critter Crackers
Ingredients
- 2 cups sorghum flour
- 1/2 tsp salt
- 1/3 cup honey
- 3 tbsp lactose-free whole milk or tolerated milk substitute
- 1/4 tsp baking soda
- 3 tsp vanilla infused oil or 1/2 tsp vanilla powder and 2 tsp coconut oil
- Up to ¼ cup warm water added slowly to form a soft dough
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, whisk together sorghum flour, salt, baking soda, and vanilla powder.
- In another bowl, mix honey and milk until combined.
- Add wet mix to the dry ingredients. Slowly stir in warm water until dough holds together — soft but not sticky.
- Roll into small balls, flatten slightly or press into cookie cutter shapes.
- Bake 12–15 minutes or until bottoms are lightly golden.
- Let cool fully — they’ll firm up more as they cool.
